With gluten-free living on the rise, there’s a definite need for good recipes, meal ideas and information.   For some, this isn’t about using the “GF” way of life to lose weight, it’s imperative to their health.  Although, I am not celiac, I do have a sensitivity to gluten that cause me several health issues.  Whether that will ever progress, I’m not sure but I am sure if I practice gluten-free eating, I will have a better chance to combat the onset of celiac and I just feel better.

Living gluten-free doesn’t have to take a lot of extra time and the food doesn’t have to taste like cardboard.  There’s plenty of naturally gluten-free foods out there (or you can opt for the gluten-free version of your favorites).

Flourless Chocolate Cupcakes

Serve alone (dusted with sugar) or topped with ganache, chocolate mousse, greek yogurt or berries.

  • Prep Time: 10m
  • Cook Time: 25m
  • Total Time: 35m

Ingredients

  • 5 1/2 c almond meal
  • 1/4 c cocoa powder
  • 1 tsp. gluten free baking powder
  • 2 eggs
  • 2 tsp. vanilla extract
  • 1/4 c olive oil
  • 1/4 c milk of your choice
  • 2 tbsp. raw honey or maple syrup

Instructions

  1. Preheat oven to 320 F (160 C)
  2. Combine almond meal, cocoa powder and baking powder.
  3. Add the eggs, oil, vanilla, milk and honey then mix well to form a smooth batter.
  4. Spoon into 12 small individual cupcake tins.
  5. Bake for 25 minutes until puffed and cooked through.
  6. Make sure not to overcook.
